  • Beef Vegetable Stew

This was one of my grandmothers favorites. She grew up on a farm with her seven siblings, they raised Herefords. This is the recipe she shared with me. Keep in mind to alter the vegetables in your soup.

We like to use our crockpot for the Chuck Roast; after it’s done cooking and cooled off - we pull apart the beef to add to the soup.

    Ingredients included:

    2 large canned Tomato juice

    1 yellow diced onion

4 diced yellow medium sized potatoes

    Pepper

    Salt

    Frozen Lima Beans

    Frozen Corn

    Frozen Peas

Carrots (we pull them from the crockpot with the beef - makes for a tender carrot

We add 2-3 cups of beef broth from the crockpot of roast for flavor.

1/4 cup of sugar to offset the acidity of the tomato juice

We let it cook on medium heat for 1 hour with occasionally stirring and then cut it to low for 3-4 hours.

Tastes just like Grandmas and sooo good on a fall/wintry day.
